So I have been away for a while. I’m sorry. We are in the process of selling our house and buying a new one. Easter seemed to sneak up on me, and we also went on a week long spring break vacation to San Diego. I wanted to blog, but I hadn’t tried any new paleo recipes over the past two weeks. With everything going on, I’ve just been sticking with my favorite go to recipes.
But now…..I’ve got some stuff for ya!
Traveling and eating paleo is always a little interesting. I usually order a burger without sauce, as a lettuce wrap, or a salad with oil and vinegar for dressing. Occasionally I’ll order sweet potato fries. (I do realize most of the time they are fried in some kind of unpaleo oil, but once in a while a girl just needs some fries!)
The first morning we were in town we stopped into a little coffee shop. I was pleasantly surprised when I saw rickaroons at the register.
I recently found rickaroons on Instagram. They make paleo friendly coconut macaroons.
Of course I had to try one! It was very tasty. The three of us devoured it in a matter of seconds!
Later in the day I was checking out the rickaroons page and I came across a photo of a cute little juice place that recently opened in Mission Beach. They make a Cookie Monster smoothie with all paleo friendly ingredients including a blended rickaroon. I had to try it!
The next day we drove to Mission Beach to check out Juice Wave.
Paleojr ordered a fresh strawberry banana smoothie, and I, of course, had the Cookie Monster. Both were great!
If you are ever in the area you should stop by. It was a healthy and yummy treat. I had a great time chatting with Sarah, who is very passionate about health and also very knowledgable. In fact we ended up going back the next day because they were so nice and the smoothies were yummy. (The beach was pretty beautiful too!)
After hanging out at the beach for a couple hours we decided to track down the Not So Fast! Paleo food truck. Luckily it was only a few miles away.
It was so great to order straight off the menu. No substitutes!
We ordered the wild boar burger, fried zucchini, duck fat chips, and the bacon and eggs bowl (with sweet potato hash on the bottom)
Mmmmmm. We all enjoyed our paleo dinner very much!
The rest of the trip I did my best to order paleo or at least clean meals. After a week of eating out three meals a day we were all getting a little burnt out. Honestly, I was missing my kitchen, and making my own healthy food.
We decided to come home a day early to get a head start on our new place.
We drove for what seemed like forever, and got home really late. When we woke up this morning we had no fresh food…..
Luckily I love to freeze bananas that are starting to brown. I also always buy too many strawberries at the fruit stand so that I can freeze some.
We happened to have a couple apples and carrots so I whipped up a healthy smoothie for breakfast.
Here’s the recipe:
4 tablespoons of hemp protien powder
1 tablespoon of hulled hemp seeds
2 frozen bananas
1/2 an apple
A handful of frozen strawberries
A couple drops of almond extract
A drizzle of agave
A sprinkle of cinnamon
And enough water for your nutribullet or blender to make a creamy smoothie.
This recipe made enough for my husband and I to both have an entire tall glass each. If you need a single serving just cut the ingredients in half.
I’ve always made fruity smoothies for dessert but never a protien filled smoothie for a meal. This one was great, and I will definetly make it again! Hope you get to enjoy one too!
