I have been absolutely terrible about blogging. I feel so lame about it too. Once again, I apologize.
We have been keeping busy enjoying summer break. Traveling and updating our new (to us) house. So, I’ve been a bit distracted.
This past week I celebrated 1 year paleo! 365 days!!!! Wahoo! Time absolutely flew by for me.
I think my last blog post touched a little on how my journey started. We were in lake Chelan, Washington with some friends who eat mostly paleo and do crossfit,and that was the beginning.
Well, completely unplanned we ironically ended up spending the exact same weekend there this year with the same friends, in the same house. So cool!
It was such an awesome way to reflect on my year that has just passed. I enjoyed sharing tips and tricks that I have learned over the past 12 months with the people who inspired me 🙂
I am a huge lover of sweet potatoes. White and orange. Both are delicious and so versatile. One super easy way to make them, which I shared with my WA friends, is to fry them in coconut oil after shredding them with a vegetable peeler. Use them as a hash with eggs or as your “rice” for a bowl. You can pair with any meat and veggie and it is yummo!
Just to show how versatile a sweet potato is, tonight I made a breakfast egg dish with a sweet potato hash inside AND sweet potato brownies. Both are so yummy, and also so completely different from each other. Savory and sweet, both from a sweet potato…..pretty awesome!
So since this is an important week, and since I haven’t yet mastered a paleo cake or cupcakes yet, I am celebrating my 1 year accomplishment with BROWNIES 😍 yum! And so can you! Enjoy!
Sweet Potato Brownies
1 baked mashed sweet potato
3 eggs whisked
1/3 cup raw honey
1/4 cup melted coconut oil
1/2 cup enjoy life chocolate chips (or other 72% or higher chocolate chips)
3 tablespoons coconut flour
2 tablespoons unsweetened cocoa powder
1/4 tsp baking powder
1/4 tsp vanilla extract
1/4 tsp cinnamon
Pinch of salt
1/4 cup unsweetened shredded coconut
Bake sweet potato for 30 mins at 425
Peel and mash then add all wet ingredients to the bowl. After combined add dry ingredients.
Grease 8×8 dish and bake at 350 for 30 minutes.
