Roasted cauliflower:
1 head of cauliflower washed and cut into florets
2 tablespoons of olive oil
Salt and pepper (to taste)
Cumin (sorry I don’t measure it anymore I just give it a good even sprinkle)
Preheat oven to 400F toss cauliflower in olive oil. Lay on cookie sheet. Sprinkle with salt,pepper, and cumin. Roast for 30-35minutes stirring occasionally. Remove when edges are browned but not burned. Enjoy!
For football Sunday I sprinkled a little grass fed mozzerella on top and warmed some no-sugar-added marinara and it was a pretty tasty snack
