Well, time has just flown by these past two weeks. Wrapping gifts, shopping, working crazy retail hours, taking and editing photos, addressing cards, cooking dinners, and Celebrating Christmas!!! I really wanted to blog, but I just couldn’t find the time…sorry! I promise I’ll get back into my routine.
Things have been busy, but very fun!
I hope you all had a great Christmas too. What a wonderful holiday to reflect and appreciate all that we have, and to enjoy the people around us!
Today is the 28th of December and our house is starting to feel normal again. Almost all of the wrapping paper is in the trash and I can actually see the floor. Toys and clothes are put away too (well, almost) I’m sure you feel the same way. 🙂
Anyway, with all of the holiday cooking and baking happening this time of year I decided to hunt down a good ol’ chocolate chip cookie recipe.
I bet your thinking all I ever blog about is dessert! Haha! I do love a good dessert. And I’ll share the recipe I found at the end of this blog, I promise. But what I really want to say, and what has really worked well for me so far with paleo is, think about a food that you enjoy eating. Something that you want for dinner this week. Google search that food with the word paleo in front of it, and you’ll be amazed what you find. For example: paleo pancakes, paleo cookies, paleo spaghetti, paleo stirfry. You can be as specific as you want. You can just type paleo chicken, or paleo soup. Sometimes I’ll just type “paleo breakfast ideas”.
Flip through your search results, find a recipe that sounds good to you, or try something new.
Not every recipe will be your favorite, some you might never EVER eat again, but some might be your new favorites! It’s fun and exciting, and HEALTHY! Don’t give up! Recipes don’t always turn out. I tried 5 different pancake recipes until my son and I found one that we both loved. And now we make them all the time. They are delicious, and super easy!
If you don’t like what you cook, throw it away, scramble up some eggs and cook some bacon! Who doesn’t enjoy a little breakfast for dinner?? I know I do! 😉
Paleo Chocolate Chip Cookies
3 cups blanched almond flour
1/2 cup virgin coconut oil
1/2 cup pure maple syrup
1 tsp baking soda
1 tsp vanilla extract
1 tsp salt
1 1/2 cup enjoy life chocolate chips
Preheat oven to 375
Combine all dry ingredients except chips
In a med bowl using a hand mixer combine eggs, vanilla, and maple syrup
Slowly combine dry into wet with hand mixer
Melt coconut oil then mix in
Once combined stir in chocolate chips
Scoop tablespoon size drops onto parchment lined sheets and bake for
About 15 mins
I found that I liked these kept in the refrigerator, but they can also sit at room temp in an airtight container. Yum!
