The past week has been crazy, as usual, this time of year. Our house is all decorated for Christmas. I have a few gifts purchased and wrapped, but still quite a few to buy. Work is insane right now. Working retail is usually kinda fun, this month is just plain crazy!

Julie honestly has the best recipes! Since we aren’t eating processed foods or sugar I try to bake cookies or muffins once a week to keep me on board.
This week I made Julie’s double chocolate cookies and her pizza spaghetti pie. Both were AMAZING!

Since my house has been eating paleo for a while now, our pantry is pretty much converted to paleo. Most of the time I have everything her recipes call for. (See last weeks blog for basic pantry items)
So let me just say this, the pizza spaghetti bake is delicious, and when it’s baking it smells just like pizza!! One of my all time favorite foods! I ate it for dinner with my family, and then packed it for lunch every day until it was gone, which was a very sad day….I will be making it again really soon!
The double chocolate cookies were equally as delicious. The crazy part for any non paleo or new to paleo peeps, there is absolutely NO flour in them! So crazy!
My grandma was here for thanksgiving and watched me bake some paleo cookies and she could not believe it. She had never seen cookies made this way. She was a bit confused about some of it, but she did love the cookies I made! 🙂
It is starting to feel like paleo is the norm around here, and I really like it!
Here are the two recipes that I cooked this week. Both are from www.paleomg.com check it out!
Double chocolate cookies
1 cup thick almond butter ( I used trader joes brand)
1 cup coconut sugar
1 egg, whisked
1/2 cup unsweetened cocoa powder
1 tsp baking soda
1 tsp vanilla extract
Pinch of salt
1/4 cup enjoy life chocolate chips
Preheat oven to 350
In a large bowl mix almond butter and sugar until combined then add egg
Add cocoa powder 1/4 cup at a time (best to use your hands at this point)
Add remaining ingredients until combined
Line a baking sheet with parchment paper. Scoop tablespoon size balls and slightly flatten.
Bake 13-15 mins
Let cool at least 5 mins before removing from pan
Pizza spaghetti pie
1 large spaghetti squash
1 lb Italian sausage
1/2 yellow onion diced
1 cup spaghetti sauce ( no sugar added)
1 tsp dry basil
Salt and pepper to taste
Any pizza toppings you like ( I used olives, uncured salami, and chopped bell pepper)
First cut spaghetti squash in half
Place face down and bake at 400 for 25 mins or until soft then remove from oven
Turn oven down to 350
Brown sausage with onions in a pan
Once squash is slightly cooled, using a fork remove threads from spaghetti squash and put in an 8×8 baking dish
Add sauce, salt and pepper and basil to sausage in the pan. Cook for a few mins then
Add sausage mixture to squash
Whisk eggs and then mix with squash and sausage until eggs are completely mixed in. Add any other ingredients you like then bake for 1 hour
Let cool at least 5 mins before serving
